Peanut Butter Granola Mini Bars

Lately I have been obsessed with finding homemade granola bar recipes that are healthy and taste great.  This is one of my favorites, the texture is more chewy than the previous granola bar recipe I posted.  The family loved them!  The photo above shows what would be considered a double serving size, the recipe says it makes 36 servings so that would be a pretty small piece.  Also, I only had chocolate chips on hand, so I used them and skipped the peanut butter chips.  I think either would be yummy, maybe even white chocolate or butterscotch chips.  Enjoy!

Peanut Butter Granola Mini Bars

36 ServingsPrep: 20 min. Bake: 15 min. + cooling

Ingredients

  • 1/2 cup reduced-fat creamy peanut butter
  • 1/3 cup honey
  • 1 egg
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 3-1/2 cups old-fashioned oats
  • 1/2 cup packed brown sugar
  • 3/4 teaspoon salt
  • 1/3 cup peanut butter chips
  • 1/3 cup miniature semisweet chocolate chips

Directions

  • In a large bowl, beat the peanut butter, honey, egg, oil and vanilla
  • until blended. Combine the oats, brown sugar and salt; add to the
  • peanut butter mixture and mix well. Stir in chips. (Batter will be
  • sticky.)
  • Transfer to a 13-in. x 9-in. baking dish coated with cooking spray.
  • Bake at 350° for 12-15 minutes or until set and edges are
  • lightly browned. Cool on a wire rack. Cut into bars. Yield: 3 dozen.

    I just made these and they are delicious. Too good, hard to limit eating just one.

  2. I agree….Mom brought some down tonight and these are great!! And I’m not typically a fan of the “homemade” granola bars!!
