Weight Watcher Friendly Strawberry Banana Bars

Strawberry-Banana Popsickles
makes about 12 popsicles (depends on the size of your molds)

2 pounds ripe strawberries, washed and hulled
3 tablespoons sugar, divided
2 tablespoons lemon juice
3 medium ripe bananas, mashed
1 cup non-fat vanilla greek yogurt (or you can use plain non-fat yogurt. I prefer Greek for extra protein!)
1 teaspoon vanilla extract

Combine strawberries, 2 tablespoons sugar and lemon juice in a food processor.  Blend until smooth.  Divide half of the strawberry mixture between your Popsicle molds (about 2 tablespoons each).  Set aside. (How do you like this ancient food processor!!!)

In a small bowl combine bananas, yogurt, 1 tablespoon sugar and vanilla.  Stir to combine.

Add banana mixture to Popsicle, filling molds about 2/3 full.

Pour remaining strawberry mixture on top.  Freeze 4-24 hours until completely frozen.  Trust me. It takes longer than 4 hours for these to freeze!  Remove from molds (I had to run some warm water over the molds to get them to release), serve and enjoy!

With the Popsicle molds I used I got about 15 of these which equaled 2 pp for Weight Watchers. These were as good as any high dollar frozen fruit bar you can buy at the grocery store!
